Chicken & Mango Salad


INGREDIENTS 2 chicken breasts, whole 2 tsp Cajun seasoning 1 large mango, chopped 1 large avocado, chopped 1 x 250g punnet cherry tomatoes, halved 1 continental cucumber, chopped Mesculin Leaves (as little or as much as you like) 1 bunch coriander, roughly chopped ¼ onion, finely sliced

DRESSING 1 lime, squeezed 1 small garlic clove, crushed 2 tbsp extra virgin olive oil ½ tsp raw honey Himalayan salt & cracked pepper

METHOD 1. Preheat over at 190°C. Sprinkle Cajun seasoning evenly over chicken & season with salt and pepper.

2. Wrap in alfoil lined with baking paper and bake for approx. 30 minutes, or until cooked through. 3. Place all salad dressing ingredients into a mason jar, shake and set aside. 3. Prepare all salad ingredients and put onto a large platter. 4. Allow chicken to cool, slice into thin strips 5. Combine dressing & chicken to salad, mix well & Serve
