Sensational Salads

There's so much to love about summer, the long day's and warm nights, walks on the beach, bbq's with loved ones, picnics and more time in the great outdoors. Simple dinners that are quick and healthy are my favourite meals in the warmer months though, and salads are a great way of packing the nutrients in and feeling nourished. I thought it was time to check my salad repertoire and create a few newbies to freshen things up. Starting with this super green salad!

Kale, Broccoli & Goats Cheese Salad
1 bunch kale, finely sliced
1 head broccoli, cut into florets
1/2 cup raw activated almonds, roughly chopped
65g Soft goats cheese
Dressing
2 tbsp organic mayonnaise
1 fresh lemon, squeezed
1 garlic clove, finely chopped
2 tbsp extra virgin olive oil
Method
1. Steam kale & broccoli in a microwave safe container for 5 minutes (ensuring it's still slightly crunchy and deep green in colour). You may need to cook them seperately.
2. On a large platter layer kale & broccoli
3. Roughly chop almonds and sprinkle on top of salad
4. Crumble goats cheese on top.
5. In a small jar place all dressing ingredients, place lid on and shake well until emulsified & drizzle onto the salad.... EAT on it's own or serve as a side salad.
