VEGAN BANANA BREAD

Topped with cashew cream, sliced banana, fresh strawberries and blueberries this recipe is so decadent & simple. It was demolished in my house by my husband and 2 kids far too quickly.

INGREDIENTS

1 tbsp Chia seeds, soaked in 2 cups Almond milk for 10 minutes

1 tbsp sunflower seeds

1/2 tsp salt

3 Overripe medium sized banana's

3 tsp Baking powder

37.5g Vanilla vegan protein powder

3 tbsp Macadamia oil

1/4 cup Maple syrup

1/4 cup Molasses

100g Coconut flour

2 1/2 cups Almond meal

1. Preheat oven at 175 deg Celsius

2. Blend all ingredients except flour and almond meal in a high speed blender.

3. In a large mixing bowl sift flour and add almond meal, pour remaining ingredients and stir gently.

4. Place in an oiled loaf tin 22 x 5cm & bake for 1 to 1 and a half hours or until firm to touch and golden brown on top.

TIP: You can place a strip of baking paper at the bottom to help it from sticking
